My son was recently diagnosed with Celiac Disease. For the past couple weeks he has been eating gluten free. This has not been easy. Yes...I have been to Trader Joes, Henry's etc. I am having a hard time coming up with things for my son to eat. I made chicken strips last night but I searched for something I could bread them with....spending hours in the store reading labels, talking to people that work there, getting a list of gluten free items within the store has been crazy. Well...I get so excited once I do find something that is gluten free but then.......I look at the other ingredients..... contains nuts or may have been processed on the same equipment as nuts or peanuts. YIKES.....back on the shelf it goes. My son also has severe food allergies to nuts, peanuts, seeds, eggs. And to top this off he is a very picky eater. I must admit he has been trying things he never would touch before. Corn tortillas, beans and fruity pebble cereal has become a staple in the house along with fruit. If you have any suggestions or ideas please pass them to me. I need to get more creative so my son is not eating the same thing everyday!
Last night my son and I had the opportunity to go see a great show....STOMP at the Balboa Theatre downtown. I have always wanted to see this show but never purchased tickets. Tonight we had FREE tickets. This show is amazing; the talent and energy these young adults have is incredible. Not to mention what great shape they are all in. Wow....what a workout. We celebrated my Nephew and Nieces birthday recently at a local park. Praying it did not rain on their parade; it turned out to be a beautiful Spring day. There was lots of family, friends, conversations, lots of food and a fabulous view of the Coronado bridge and bay. There was this big chair and my son acting silly.
It is Spring and time for new plantings. Although we had some pretty heavy rain last night today the sun is shining once again. The air smells fresh and the newly planted flowers, plants are thriving. Don't know why but that puts a smile on my face. Hope you all are having a wonderful weekend!
Seems like lately I have had only bad news. My Uncle passed away a few days ago from cancer. He went quickly after being placed in the hospital about two weeks ago. My mother had one sister and one brother and all have passed away. All of some form of cancer. My Uncle was a great man; he lived in South Dakota and called me every few weeks to see how I was doing. He liked to reminisce about the days when they used to visit and all the fun things we would do. He liked to talk about my mother (his sister) and that would some times get us both chocked up. In his 80's he used the computer, email and he sent me E-cards. I will miss those phone calls and emails and I will miss my uncle.
